Staghorn Sumac is a wild food, which grows plentifully in Northwest Connecticut. The berry has a tart, citrusy flavor and is wonderful in a Z'aatar spice blend or any type of Mediterranean cusine.

To process the sumac at home, you'll want to break up the pieces (either by hand or in food processor) and then sift through a screen to take out the seeds/woody bits from the powder. Once sifted, keep the powder in a cool closet in an airtight container. It's flavor will last for about a year.
