Eggs with Tomatillo, 2 Ways

Kale and Apple Salad 

Baby Eggplants with Ginger, Cilantro, Coconut

Heat some coconut oil in a skillet. Cut your baby eggplants in half and season with salt, pepper and toasted coriander seeds. Place cut side down in skillet and cook until browned on that side. Turn over and continue cooking until eggplants are soft. Meanwhile, make a fresh apple chutney with grated ginger, finely chopped apple, chopped cilantro, chopped red onion and throw in some unsweetened shredded coconut and some lime juice.

Eggs with Tomatillos, 2 Ways

Depending on my mood I want a runny egg cooked in a sauce or a cheesey omelette topped a fresh cool yet spicy salsa.

1) Chop some onions and cook in a skillet with butter or oil until translucent. Add chopped tomatillos and season with salt and pepper. When the tomatillos have broken down and are saucy crack a few eggs right on top. Cover with a lid while the eggs cook. I like my yolks nice and runny. When the eggs are ready toss a handful of cilantro on time and give a few squeezes of lime juice. Serve with hot sauce and fresh homemade flour tortillas.

2) Make a quick salsa of chopped red onion, tomatillos, cilantro, garlic, hot peppers, lime juice, olive oil and sea salt. Set aside while you whip up and omelette. This is a great simple supper for a solo evening. In which case I whisk up 2 eggs and pop it into a small skillet with plenty of butter. Season eggs with salt and pepper and as the eggs are just setting I had whatever cheese I have on hand - a mix of cheddar and cream cheese would actually be really yummy here. Quickly roll up your omelette all the way onto your plate. Keep in mind that your eggs will keep cooking so if you like the nice small tender curds, you can leave the eggs a little runnier than you think. I will never tire of watching Jacque Pepin make and omelette so I'll just leave this here for you. Top the omelette with the fresh salsa.

Kale and Apple Salad

A simple massaged kale salad. Finely chop kale and season with lemon juice, salt, pepper, olive oil and massage until soft. Add thinly sliced apples, grated lemon zest and anything else that strikes your fancy... grated parmesan, croutons, grated carrots, raisins, toasted nuts etc.....
