Meet Sunchokes, aka Jerusalem artichokes

This is the second to last week and we feel busier than ever at the farm, getting in the last of the storage crops, cleaning up the fields and getting ready to plant next year's garlic.

Sunchoke, Fennel and Apple Salad

As finely as possible, meaning use a mandolin if you have one, shave some fennel, sun chokes and apple. Toss with lemon juice, fennel fronds, parsley, some grainy mustard and olive oil. Season with sea salt and crushed black pepper. Perfect for fall - crisp, earthy and sweet.
