This week's share: Celeriac, Scallions, Komatsuna, Escarole, Apples, Pears, Sage, Honeynut Squash
Celeriac is a longtime coming. It is one of the first crops we seed in March and one of the last crops we harvest in October. These delicious celery roots have all the flavor of celery in tuber form.
The classic is a good start but feel free to change it up a bit like this take that adds apples and a little hot pepper: Celery Root Salad with Apples and Parsley
This weather also begs for a warm stew or big pan of roasted veggies so feel free to substitute celery root in stews where potatoes are called for. Or peel and chop your honey nut squash and chop your celeriac and roast in the oven with some apples and sage!
